Sundays are the day I love to Bake. I have time to experiment and to try out new recipes.

This past Sunday I was on a Chocolate Baking Spree…. I made more of my Chocolate Chocolate Chip Cookies, (as a request from my 9 year old) and wondered how the batter would bake up as donuts.

The results were amazing the donuts were light and fluffy and had a totally different taste and mouth feel than the cookies.

But that wasn’t enough chocolate for the day!

I made these incredible rich fudge brownies. They are so smooth and have a great chocolate taste.

Because they are make with Coconut Flour they are very filling and satisfying.

I shared a few with a neighbor friend who is also eating Keto, she was afraid she would eat them all in one sitting. (she couldn’t).

Believe me one brownie will leave your chocolate craving behind. I like to top them with a dollop of fresh whipped cream or have a little almond milk with them. Yum mm

Tip: Cut them up and store them in the freezer and you will have a rich chocolaty treat whenever you have a craving.

These would also taste great with a tsp of mint extract added. to create chocolate mint brownies.

Coconut Flour Fudge Brownies

Coconut Flour Fudge Brownies


  • 5 oz Cream Cheese - softened
  • 3/4 Cup Coconut oil or butter - softened
  • 1 Tb Vanilla
  • 4 Eggs
  • 1/2 Cup Coconut Flour
  • 3/4 Cup Powdered Erythritol
  • 1/4 tsp Baking Powder
  • 1/3 Cup Cocoa Powder
  • 2/3 Cup Almond Milk


  1. Preheat oven to 350 degrees
  2. Mix dry ingredients together to remove lumps - set aside
  3. Whip Softened Cream Cheese and Coconut Oil together
  4. Add:
  5. Eggs, Vanilla, and Almond Milk
  6. Mix until well combined
  7. Add Dry ingredients and mix well
  8. Pour into a greased 8x8 baking dish
  9. Bake at 350 degrees for 40-45 min
