I’m Lindy.  I’m a HIIT loving, keto-baking, mother of four…(five if you count my adorable husband) and I’m on an adventure to find, create and Ketofy recipes that match my ketogenic lifestyle.

While desserts are my favorite, I also love testing and tweaking recipes for quick lunch and dinner ideas.

So if you’re wondering what you CAN eat while following a ketogenic lifestyle, I’ve got great ideas that you can try at home.

My Journey to a Keto Lifestyle

After the birth of my first child, I struggled to lose my baby weight.  I resorted to a low carb diet.  It had really worked between my Freshman and Sophomore years of high school, but it was less effective at getting weight off after having a baby.  So, I would exercise inconsistently and then fall back into a revolving door of high carb binge, fasting and giving up on any efforts to lose weight and feel like my “old self”.

Two more children later, I was 80 pounds heavier than when I got married. I basically gave up on myself and ever feeling like I could have my body back.

The birth of my last child signaled a turning point for me.  I had graduated with my Bachelors Degree in Nutrition and began to explore alternatives to nutrition.

The idea of consuming fat in such large quantities made no sense to me. An article by Maria Emmerich changed my mind almost immediately.  The science behind a keto adapted lifestyle is not new. Despite that fact, it is certainly not preached in the mainstream nutrition approach to weight loss.

My experience with keto adaptation has literally changed my life.  From the first few weeks of adaptation and its initial weight loss of over 80 pounds, to my most recent challenges with plateauing, keto adaptation has been the frame work that I’ve built my nutritional lifestyle.

I feel great! This lifestyle is a journey.

 

Disclaimers and Inspirations

I will be the first to admit that going home for a holiday (and consuming all sorts of carb laden goodies) has been source of guilt and shame for me.  I’m not perfect in my approach to keto and consider myself a work-in-progress.  Having the support of my husband- (he’s keto too!) has made a big difference. He helps in the testing of recipes and serves as a good guinea pig for desserts.  There is also a great community of keto bloggers that have great ideas and information on the keto adapted lifestyle.   I owe a debt of gratitude to the keto community for providing the science, the variety and the inspiration to keep on keto-ing.
